This very robust strain features a short lag phase, performs consistently within 25°C–40°C, tolerates osmotic stress, and operates effectively under challenging conditions, including a pH range of 3.4–5.3, producing a complex and well-balanced aromatic profile rich in key esters and phenyl-2 ethanol.
