DistilaMax® LS has been selected for fruit fermentation and other fructose substrates; it displays a wide range of temperatures for fermentation including low temperatures, it works well from 18°C up to 32°C. DistilaMax LS demonstrates a short lag phase which helps to compete against contaminant bacteria. DistilaMax LS produces a broad spectrum of flavor congeners well-suited for fruit brandies, rum, tequila and mezcal.
